  • 4 large potatoes, peeled and chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups kale or cabbage, chopped
  • 1/2 cup green onions (scallions), sliced
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or plant-based butter substitute

Instructions

  1. Prepare the vegetables by washing and chopping the potatoes, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic; sauté until translucent.
  3. Add chopped potatoes to the pot and cover with vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender.
  4. Blend the soup until smooth using an immersion blender or standard blender.
  5. Return the blended soup to medium heat; stir in chopped kale or cabbage and green onions. Season with salt and black pepper to taste. Simmer for an additional 5-10 minutes until greens are tender.
  6. Serve warm, optionally garnished with extra green onions or a drizzle of olive oil.
