  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 can (13.5 oz) coconut milk

  2. Remove the beef and sauté the chopped onion in the same pot until translucent (about 5 minutes). Add minced garlic and grated ginger, cooking for an additional minute.
  3. Stir in curry powder, cumin, and coriander; cook for another minute before returning the browned beef to the pot.
  4. Pour in coconut milk and enough broth to cover the beef. Bring to a gentle boil, then reduce heat to low and simmer uncovered for about 45 minutes until tender.
  5. Prepare fries as per package instructions or homemade style, and cook rice separately until fluffy.
  6. Serve hot alongside crispy fries and fluffy rice.
