  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 2 tbsp vegetable oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium-high heat. Season beef with salt and black pepper; sear until browned on all sides. Remove from pot.
  2. In the same pot, reduce heat to medium and sauté chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder, turmeric, cinnamon, and cayenne pepper (if using). Cook for an additional minute.
  4. Return seared beef to the pot; pour in coconut milk and beef broth. Stir well and bring to a gentle simmer.
  5. Cover and reduce heat to low; braise for 2-3 hours until beef is fork-tender.
  6. Adjust seasoning if needed before serving over rice or with naan.
