  • 16 oz full fat cream cheese
  • 1/2 cup unsalted butter
  • 5 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, combine melted coconut oil (or vegetable oil), sugar, eggs, buttermilk, and vanilla; whisk until smooth.
  4. Gradually add the wet mixture to the dry ingredients; fold in grated carrots until just combined.
  5. Divide batter between prepared pans and bake for 26 to 28 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before removing from pans.
  7. For the frosting, beat cream cheese and butter until creamy; add vanilla and salt before gradually mixing in powdered sugar.
