  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine brown sugar, softened butter, and cinnamon for the filling. Mix until smooth and set aside.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt. Set this mixture aside.
  4. In the bowl of a stand mixer fitted with the paddle attachment, add cubed butter. Turn on low speed and cream for about 1 minute. Gradually add in granulated sugar and cream until smooth (about 1-2 minutes).
  5. Add eggs, egg yolks, and vanilla extract and blend until well combined.
  6. Gradually mix in dry ingredients until fully incorporated.
  7. On a clean, lightly floured surface, press cookie dough into a long rectangle using your hands.
  8. Spoon the cinnamon sugar filling onto the dough evenly.
  9. Roll dough starting from one long edge carefully to avoid tearing.
  10. Slice rolled dough into approximately 10-12 equal pieces.
  11. Roll each piece into balls ensuring filling is sealed inside and bake for about 9-11 minutes, until edges are lightly golden brown.
  12. Allow cookies to cool on baking sheet for about 10-15 minutes, then transfer to cooling rack.
  13. In a medium bowl using a hand mixer, combine cream cheese and softened butter. Mix until smooth.
  14. Add confectioners sugar, vanilla extract, and salt. Mix until smooth; add more powdered sugar if desired.
  15. Spread frosting over cooled cookies and sprinkle with additional cinnamon if desired.
