  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • 4 tablespoons melted vegan butter (for cinnamon swirl)
  • ⅓ cup light brown sugar (for cinnamon swirl)
  • 2 tablespoons cinnamon (for cinnamon swirl)
  • ¾ cup powdered sugar (for frosting)
  • 2 tablespoons melted vegan butter (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well combined.
  3. Add the baking powder, baking soda, cinnamon, salt, flour, and oats to the wet mixture. Stir until just combined; do not overmix.
  4. Pour half of the batter into the prepared loaf pan.
  5. In a separate bowl, combine melted vegan butter, brown sugar, and cinnamon for the cinnamon swirl. Spread half of this mixture over the batter in the loaf pan.
  6. Add remaining batter on top of the swirl layer and dollop with the rest of the cinnamon mixture.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let cool before frosting with a mixture of powdered sugar, melted vegan butter, and softened vegan cream cheese.
