  • 1/4 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup
  • or 1/2 cup melted dark chocolate

Instructions

  1. Line a muffin tin with silicone liners.
  2. Prepare the raspberry filling: In a small pot, simmer raspberries and maple syrup over medium heat for 8-10 minutes. Mash thoroughly, then mix in vanilla and chia seeds; let cool for about 10 minutes.
  3. For the chocolate layer: Combine melted coconut oil, cocoa powder, and maple syrup in a bowl until smooth (or use melted dark chocolate).
  4. Assemble: Pour chocolate into each muffin liner and freeze for 5 minutes. Top with raspberry mixture and freeze again for another 5 minutes. Add the final layer of chocolate and freeze until set (about 2 hours).
