  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 5 oz chopped chocolate (preferably dark)
  • 1/4 cup heavy cream
  • 1/4 cup cherry preserves

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together butter and sugars until fluffy. Add in egg yolks and vanilla extract; mix well.
  4. Gradually combine the dry ingredients with the wet mixture until just incorporated.
  5. Scoop tablespoon-sized dough onto the baking sheet and create an indentation using your thumb.
  6. Bake for about 10 minutes; cool on a wire rack.
  7. For the ganache, heat chopped chocolate and heavy cream in a saucepan over low heat until smooth. Fill each cookie's indentation with ganache after cooling slightly.
