  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro (or parsley)
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic (chopped)
  • 1/2 tablespoon honey
  • Pinch of salt

Instructions

  1. Soak bamboo skewers in cold water for 15 minutes.
  2. Rinse shrimp under cold water and pat dry.
  3. In a mixing bowl, whisk lime juice, olive oil, cilantro, Thai sweet chili sauce, garlic, honey, and salt.
  4. Add shrimp to the marinade and toss to coat evenly; marinate for at least 30 minutes.
