  • 1 tablespoon ghee or butter
  • 1 small onion, chopped
  • 34 garlic cloves, skin on
  • 2-inch ginger, chopped
  • 1 bay leaf
  • 12 Kashmiri dried chilies
  • 8 black peppercorns
  • 1 lb bone-in skinless chicken thighs & drumsticks
  • 3/4 teaspoon salt
  • 4 cups warm water
  • 1/4 teaspoon garam masala
  • Fresh cilantro leaves (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot over medium heat, melt the ghee.
  2. Add onion, garlic, ginger, cilantro stems, bay leaf, chilies, and peppercorns; sauté for about 1 minute.
  3. Add chicken pieces and sear lightly; sprinkle with salt and cover with water.
  4. Bring to a boil; reduce to low heat, cover, and simmer for 35-45 minutes. Skim off any foam as needed.
  5. Strain the shorba using a colander; shred the chicken once cooled.
  6. Return the liquid to the pot; add chicken back in along with garam masala and chopped cilantro. Simmer for an additional 5 minutes.
  7. Serve warm with lemon wedges and enjoy!
