  • 6 cups low-sodium chicken broth
  • 1 cup pastina pasta (or small pasta)
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • Fresh parsley for garnish
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots; sauté for 5-6 minutes until softened. Stir in garlic and cook for another minute.
  2. Pour in the chicken broth and add salt, pepper, and bay leaf (optional). Let simmer for about 10 minutes.
  3. Add pastina pasta to the pot and cook according to package instructions (about 6-8 minutes) until al dente. During the last minute of cooking, stir in shredded chicken.
  4. Remove from heat; stir in grated Parmesan cheese and chopped parsley before serving hot.
