  • Curry powder
  • Coconut milk

  • Long-grain basmati rice
  • Water
  • Pinch of salt

Instructions

  1. Prepare the ingredients by chopping bell peppers into bite-sized pieces and slicing the onion.
  2. Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and ginger until onions are translucent.
  3. Add chicken to the skillet and sear until lightly browned on all sides (about 5–7 minutes).
  4. Stir in curry powder until chicken is well coated.
  5. Add bell peppers and coconut milk, mixing gently to combine.
  6. Cover and simmer for about 15 minutes or until chicken is cooked through.
  7. While the curry simmers, rinse basmati rice under cold water. In another pot, bring rice and water to a boil with a pinch of salt, then reduce heat to low, cover, and cook until fluffy (about 15 minutes).
  8. Serve hot curry over rice, garnished with fresh cilantro.
