  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot over medium heat, cook chopped Turkey Bacon until crispy. Remove from pot and set aside.
  2. In the same pot, sauté diced onion, chopped celery, and minced garlic until soft.
  3. Stir in all-purpose flour, then gradually add chicken broth while stirring to avoid lumps.
  4. Add diced potatoes, dried thyme, and parsley; simmer until potatoes are tender.
  5. Mix in cooked shredded chicken and corn; cook for an additional 5–7 minutes.
  6. Reduce heat; stir in half & half and sour cream until warmed through but not boiling.
  7. Serve hot with desired toppings.
