  • 1 tablespoon cornstarch
  • 1/3 cup granulated sugar (for blackberry swirl)
  • 1 tablespoon cornstarch (for blackberry swirl)
  • 1 tablespoon fresh lemon juice
  • ¾ cup granulated sugar (for ice cream base)
  • ¼ teaspoon kosher salt
  • 1 tablespoon vodka (optional)

Instructions

  1. Prepare an ice bath and chill a metal loaf pan in the freezer.
  2. Make the blackberry swirl: Cook blackberries, sugar, cornstarch, and lemon juice until thick; puree and chill.
  3. Create the chamomile base: Steep chamomile in a mix of milk, heavy cream, sugar, honey, and vanilla after boiling; strain.
  4. Mix cornstarch slurry into the strained mixture; add cream cheese until smooth.
  5. Chill the mixture thoroughly before churning it in an ice cream maker until soft-serve consistency.
