  • 12 cups cubed French bread
  • 3 pears (peeled and diced)
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • 2 tsp ground cardamom
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp kosher salt
  • Optional: caramel sauce or whipped cream for serving
  • 10 cardamom pods (for caramel sauce, optional)
  • 1 ½ cups sugar (for caramel sauce)
  • ¼ cup water (for caramel sauce)
  • ¼ cup orange juice (for caramel sauce)
  • zest of 1 orange (for caramel sauce)
  • ½ tsp kosher salt (for caramel sauce)
  • pinch of ground cardamom (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a large mixing bowl, combine cubed French bread, diced pears, brown sugar, and 1 tsp of ground cardamom.
  3. In another bowl, whisk together eggs, milk, heavy cream, sugar, salt, and remaining cardamom until smooth.
  4. Pour the custard mixture over the bread and pear mixture; let soak for 15 minutes.
  5. Transfer to the prepared baking dish and bake for about 60 minutes until golden brown on top.
  6. Serve warm with caramel sauce or whipped cream if desired.
