  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup pistachios, chopped
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved plums cut-side up on a lined baking tray and drizzle with olive oil and honey if desired.
  3. Roast for 20-25 minutes until soft and caramelized.
