  • 2 tablespoons balsamic vinegar
  • 2 tablespoons parsley leaves (finely chopped)
  • 2 tablespoons basil leaves (finely chopped)
  • 2 tablespoons Castelvetrano olives (chopped)
  • 2 tablespoons Kalamata olives (chopped)
  • 1 clove garlic (grated)
  • ½ teaspoon dried oregano
  • ¼ teaspoon flaky sea salt (or more to taste)
  • ¼ cup parmesan cheese (freshly grated)
  • fresh warm bread (for serving)

Instructions

  1. In a shallow bowl, combine ¾ cup of extra virgin olive oil with 2 tablespoons of balsamic vinegar.
  2. Finely chop 2 tablespoons each of fresh parsley and basil, and add them to the bowl along with 2 tablespoons each of chopped Castelvetrano and Kalamata olives.
  3. Grate in 1 clove of garlic, then add ½ teaspoon dried oregano and ¼ teaspoon flaky sea salt.
  4. Finish by grating ¼ cup of parmesan cheese over the mixture.
  5. Stir well to combine all ingredients, then serve immediately alongside fresh warm bread.
