  • 1 cup salted butter
  • 1 cup milk
  • 1¼ cups golden raisins
  • 1¼ cups raisins
  • ¾ cup dried pitted dates
  • ½ cup currants
  • 1⅓ cups walnuts
  • 2 cups all-purpose flour
  • tsps pumpkin pie spice
  • ¾ cup golden syrup
  • 2 extra-large eggs
  • 5 tbsps apple juice

Instructions

  1. Preheat your oven to 300°F (150°C) and line a 9-inch round cake tin with parchment paper.
  2. In a large saucepan, combine milk, golden syrup, butter, dates, raisins, currants, and candied peel. Heat gently until the butter melts; allow to cool.
  3. In a separate bowl, sift flour, pumpkin pie spice, and baking soda; stir in chopped walnuts.
  4. Once cooled, beat in eggs one at a time into the fruit mixture. Gradually fold in the dry ingredients until just combined.
  5. Pour batter into the prepared tin and bake for 2 to 2½ hours or until a skewer comes out clean. Cover loosely with foil if browning too much.
  6. While warm, poke holes in the top of the cake and drizzle with apple juice. Cool completely before storing.
