  • 3 and 1/3 cups flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cubed)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan by lining it with parchment paper and spraying it with nonstick cooking spray.
  2. In a large bowl, combine flour, baking powder, salt, brown sugar, and sugar. Add cold butter cubes and mix until crumbly. Stir in eggs and vanilla extract until combined.
  3. Press two-thirds of the mixture into the bottom and sides of the prepared pan. Place remaining crumbs in the refrigerator.
  4. For the filling, mix mascarpone cheese, cream cheese, sugar, corn starch, eggs, and vanilla until smooth. Pour half into the crust and sprinkle with blueberries; top with remaining filling.
  5. Bake for 65–75 minutes until golden brown and a toothpick comes out clean.
  6. For glaze: Mix powdered sugar with milk until smooth.
