  • Optional garnish: raw sugar or extra rosemary

Instructions

  1. Preheat oven to 375°F. Thaw puff pastry until pliable.
  2. Prepare blackberry honey mixture by combining honey, blackberries, and chopped rosemary in a saucepan over medium heat. Simmer gently while mashing the berries slightly; remove from heat and let cool.
  3. Roll out puff pastry on a flat surface. Spread the cooled blackberry mixture evenly on the pastry, leaving a border.
  4. Scatter brie chunks over the blackberry layer. Roll the pastry tightly into a log.
  5. Freeze the log for 15 minutes before slicing into 10-12 rounds.
  6. Arrange slices on a parchment-lined baking sheet and brush each with beaten egg. Optionally sprinkle raw sugar or rosemary on top.
  7. Bake for 15-18 minutes until golden brown. Let cool slightly before serving.
