  • 1 red bell pepper
  • 1 cup black beans (drained & rinsed)
  • 1 cup corn (canned or steamed)
  • 1/2 cup diced tomatoes
  • 1/41/3 cup sliced green onion
  • 1/2 cup grated cheddar cheese
  • 1/4 cup crushed tortilla chips
  • 1/4 cup sour cream
  • 2 tbsp red salsa
  • 1/2 tsp ground cumin
  • 1/8 tsp salt (to taste)
  • Juice of 1/2 lime

Instructions

  1. In a bowl, mix sour cream, salsa, cumin, salt, and lime juice until smooth.
