  • 3 tbsp vegan butter (45g – melted)
  • 1 tsp vanilla extract (2g)
  • ½ cup light brown sugar (85g – loosely packed)
  • 1 tbsp ground cinnamon (12g)
  • 3 tbsp softened vegan butter (45g)
  • ¼ cup melted Biscoff Cookie Butter
  • 56 crushed Biscoff cookies
  • 1 tsp vanilla extract (3g – optional)
  • 2 tbsp vegan cream cheese (softened slightly)
  • 1 cup powdered sugar (130g)
  • 2 tbsp melted Biscoff cookie butter
  • 12 tsp dairy-free milk (as needed)

Instructions

  1. In a mixing bowl, combine warm dairy-free milk with ¼ cup light brown sugar until dissolved. Sprinkle in active dry yeast and let sit until foamy (about 5 minutes).
  2. In another bowl, whisk together flour, cinnamon, and salt. Add melted vegan butter and vanilla to the yeast mixture; combine with the dry ingredients until a dough forms.
  3. Knead on a floured surface until smooth, then let rise in a greased bowl covered with cloth for about 1 hour or until doubled in size.
  4. Roll out the dough and spread softened vegan butter followed by melted Biscoff cookie butter. Sprinkle with sugar-cinnamon mixture and crushed Biscoff cookies.
  5. Roll up tightly, slice into pieces, and place in a greased baking dish to rise again for 30 minutes.
  6. Preheat oven to 350°F (175°C) and bake for 20 minutes or until golden brown.
