  • 6 tbsp vegetable shortening
  • 3/4 cup (150g) dark brown sugar, packed
  • 1 tbsp vanilla extract
  • 1 large egg
  • 3/4 cup (250g) unsulphured molasses
  • 1 tbsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/4 tsp ground clove
  • 3 1/2 cups (450g) all-purpose flour, spooned and leveled
  • 1 1/2 cups (165g) powdered sugar for decorating
  • 68 tsp water for decorating
  • 1 tsp corn syrup for decorating
  • Gel food coloring (optional) for decorating

Instructions

  1. Cream together room temperature unsalted butter and vegetable shortening in a large mixing bowl.
  2. Add dark brown sugar, vanilla extract, an egg, and molasses; mix until well blended.
  3. In another bowl, whisk ground ginger, cinnamon, salt, baking soda, cream of tartar, ground clove, and all-purpose flour.
  4. Gradually combine dry ingredients with wet mixture until a dough forms; wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out chilled dough on a floured surface to about 1/4 inch thickness; cut into desired shapes using cookie cutters.
  7. Bake for about 8 minutes or until edges are firm; cool on wire racks before decorating.
