  • 1 can plain breadcrumbs (10 oz)
  • 2 tablespoons minced garlic
  • 1 large onion, chopped
  • 1 cup melted unsalted butter
  • 1 bunch fresh parsley, finely chopped
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine breadcrumbs, minced garlic, chopped onion, melted butter, and parsley. Mix well.
  3. Season the beef tenderloin generously with salt and pepper. Create a pocket in the roast by slicing it lengthwise without cutting all the way through.
  4. Spoon the stuffing into the pocket of the beef tenderloin and tie with kitchen twine.
  5. Place in a roasting pan and roast for about 50 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Let rest for 10-15 minutes before slicing.
