  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • 6 tablespoons softened butter
  • 6 garlic cloves (minced)
  • 1 teaspoon finely chopped fresh rosemary
  • 1 teaspoon finely chopped fresh thyme

Instructions

  1. Allow the beef tenderloin to come to room temperature for 1 to 2 hours before cooking.
  2. In a bowl, mix softened butter, minced garlic, rosemary, and thyme; set aside.
  3. Preheat your oven to 425°F (220°C). Trim and tie the beef if necessary.
  4. Pat the beef dry with paper towels and season generously with salt and pepper.
  5. Heat avocado oil in a cast-iron pan over medium-high heat and sear the beef on all sides until golden brown (about 10 minutes).
  6. Spread the herb butter mixture generously over the top of the beef and transfer the pan to the oven. Roast for 15 to 20 minutes based on desired doneness.
  7. Remove from oven, let rest for 10 to 15 minutes, slice, and serve.
