Ingredients

Scale
  • 2 lbs beef chuck, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon chili flakes (optional)
  • 1 can coconut milk
  • Broth (enough to cover the beef)

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the beef into cubes.
  2. In a heavy-bottom pot, heat vegetable oil over medium heat. Sauté the onion until translucent, then add garlic and ginger until fragrant.
  3. Add cubed beef to the pot and sear on all sides until browned.
  4. Sprinkle in curry powder, cumin, turmeric, and optional chili flakes; stir well to coat the beef evenly.
  5. Pour in coconut milk and broth to cover the meat. Bring it to a boil, then reduce heat to low and let it simmer for about 1.5 hours until tender.
  6. Serve hot with steamed rice or crispy fries.
