Ingredients

  • 40 large raw shrimp (12.8 oz, shelled and deveined)
  • Fresh cracked pepper
  • 2 1/2 tbsp light mayonnaise
  • 2 tbsp scallions (chopped fine)
  • 1 1/2 tbsp Thai sweet chili sauce
  • 1/2 tsp Sriracha (or to taste)
  • Oil spray
  • Fresh parsley (for garnish)

Instructions

  1. In a small bowl, combine light mayonnaise, scallions, Thai sweet chili sauce, and Sriracha; set aside.
  2. If using wooden skewers, soak them in water for at least 20 minutes.
  3. Season shrimp lightly with fresh cracked pepper.
  4. Thread five shrimp onto each skewer.
  5. Preheat the grill to medium heat and lightly oil it.
  6. Grill the shrimp skewers for about 6–8 minutes until opaque and cooked through.
  7. Brush with sauce and serve immediately.
