  • ¾ cup granulated sugar

  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, sugar (if using), and melted butter; press into the bottom of a springform pan. Bake for 8–10 minutes until golden and let cool.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Incorporate eggs one at a time, then stir in sour cream (or Greek yogurt), vanilla extract, and mashed bananas.
  3. Pour filling over the cooled crust in the springform pan placed in a water bath. Bake for 60–70 minutes until edges are set but center remains jiggly. Cool gradually in the oven for about an hour.
  4. Chill in the refrigerator for at least 4 hours or overnight before serving. Top with fresh banana slices and whipped cream.
