  • ¾ cup sugar
  • ½ cup sour cream
  • ¼ cup softened butter
  • 1 egg
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 cups powdered sugar
  • 1½ tbsp. milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, beat together sugar, sour cream, softened butter, and egg until creamy. Mix in mashed bananas and vanilla extract.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Spread the batter evenly in the prepared pan and bake for 20 to 25 minutes or until golden brown.
  5. Cool slightly before lifting out onto a wire rack.
  6. For the brown butter icing, melt butter in a saucepan over medium heat until browned. Whisk in powdered sugar, vanilla extract, and milk until smooth.
  7. Frost the warm banana bars with the icing once cooled for about 10–15 minutes.
