- ¾ cup sugar
- ½ cup sour cream
- ¼ cup softened butter
- 1 egg
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 2 cups powdered sugar
- 1½ tbsp. milk
- Preheat your oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
- In a large bowl, beat together sugar, sour cream, softened butter, and egg until creamy. Mix in mashed bananas and vanilla extract.
- Stir in flour, baking soda, and salt until just combined.
- Spread the batter evenly in the prepared pan and bake for 20 to 25 minutes or until golden brown.
- Cool slightly before lifting out onto a wire rack.
- For the brown butter icing, melt butter in a saucepan over medium heat until browned. Whisk in powdered sugar, vanilla extract, and milk until smooth.
- Frost the warm banana bars with the icing once cooled for about 10–15 minutes.
