  • 1 cup brown sugar (packed)
  • 1 large egg
  • 1/4 cup unsulfured molasses

  • 1/3 cup granulated sugar (for rolling)

Instructions

  1. In a medium bowl, sift together flour, salt, baking soda, ginger, cinnamon, and cloves. Set aside.
  2. In a large mixing bowl, cream softened butter and brown sugar with an electric mixer until light and fluffy (about 2–3 minutes).
  3. Beat in the egg, molasses, and vanilla extract until smooth.
  4. Gradually mix dry ingredients into the wet mixture on low speed until a soft dough forms—avoid overmixing.
  5. Cover dough with plastic wrap and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Scoop tablespoon-sized balls of dough and roll in granulated sugar before placing them on the prepared sheets, leaving space between cookies.
  8. Bake for 8–10 minutes until slightly soft in the center; they will firm up as they cool.
