  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning (or smoked paprika + chili powder)
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • Chopped parsley (for garnish)
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella (or Italian blend)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, minced garlic, salt, pepper, and chopped parsley until well coated.
  3. Spread the potatoes evenly on a baking tray and roast for 25-30 minutes or until golden and crispy. Flip halfway through for even cooking.
  4. Place the trimmed asparagus on another baking tray.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the oven for 12-15 minutes. During the last 5 minutes of baking, sprinkle shredded cheese over the asparagus and return it to the oven until melted and bubbly.
  7. Rub each salmon fillet with Cajun seasoning, salt, black pepper, and a little olive oil.
  8. Bake or pan-sear at 400°F (200°C) for 12-15 minutes until just cooked through.
  9. On each plate, layer roasted garlic potatoes followed by cheesy asparagus and top it off with baked salmon fillets.
  10. Garnish with fresh parsley for an added touch of color and flavor.
