1 large onion, diced
2 large carrots, peeled and sliced
4 cups chicken broth
16 oz gnocchi
2 cups heavy cream or half-and-half
2 cups shredded cheddar cheese (medium or sharp)
1–2 tsp salt
1 tsp black pepper
1 tsp garlic powder (or 4 cloves minced garlic)
¼ tsp dried thyme
½–1 tsp red chili flakes (optional)
Instructions
In a large pot, heat the butter or olive oil over medium heat. Add the diced onions and sliced carrots; sauté until tender (about 5–7 minutes).
Pour in the chicken broth and bring to a simmer. Season with salt, black pepper, garlic powder (or minced garlic), thyme, and red chili flakes if desired.
Gradually stir in the heavy cream or half-and-half along with the shredded cheddar cheese until melted.
