Ingredients

Scale
  • 3 boneless skinless chicken breasts (about 1 ½ pounds)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 5 tablespoons unsalted butter
  • 1 medium shallot (diced)
  • 1 teaspoon garlic (minced)
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 1 package (16 ounces) potato gnocchi (uncooked)
  • 2 cups fresh baby spinach
  • ½ cup Asiago cheese (finely grated)
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a non-stick skillet over medium heat, melt 2 tablespoons of butter. Cook the chicken for about 8-10 minutes or until fully cooked. Transfer to a plate and cover.
  3. In the same skillet, melt the remaining butter and sauté the shallot until softened. Add garlic and cook briefly.
  4. Whisk in flour, then gradually add the chicken broth while stirring to avoid lumps. Allow sauce to thicken slightly.
  5. Stir in half-and-half and gnocchi, cooking until tender.
  6. Add spinach and Asiago cheese, cooking until spinach wilts and cheese melts.
  7. Serve by placing chicken on top of the gnocchi mixture and garnish with parsley.
