  • 3 tbsp granulated sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 6 oz cream cheese, cold
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare apple cider reduction by simmering cider until thickened.
  2. In a bowl, beat cream cheese with sugar, then mix in vanilla and reduced cider.
  3. In another bowl, cream together butter and sugars; add egg yolks and cider reduction.
  4. Mix dry ingredients separately, then combine with wet mixture until just blended.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Scoop dough onto the sheet, place cheesecake filling in the center, and fold dough over.
  7. Bake for about 11 minutes or until edges are lightly golden.
