  • 1.5 pounds beef tenderloin, cut into medallions
  • 1 cup apple cider
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter (plus 1 tablespoon for sauce)
  • Salt and pepper to taste
  • Optional: cinnamon for sweet potatoes

Instructions

  1. Marinate beef in a mixing bowl with half a cup of apple cider, garlic, thyme, salt, and pepper for at least 15 minutes.
  2. Boil salted water in a pot; add cubed sweet potatoes and cook until tender (15-20 minutes). Drain.
  3. In a skillet over medium-high heat, heat olive oil; sear beef on both sides until browned (3-4 minutes each side). Remove from skillet.
  4. Sauté onions in the same skillet for 3-4 minutes until softened; add reserved marinade and remaining apple cider. Simmer.
  5. Return beef to the skillet; cover and cook until internal temperature reaches 145°F (about 10-15 minutes).
  6. For the mashed sweet potatoes, combine cooked potatoes with butter, milk or cream, salt, and optional cinnamon. Mash until smooth.
  7. Serve mashed sweet potatoes topped with beef and drizzle with sauce.
